My overkill Plex Server

Hello, 

  I've been watching all the wonderful YouTube video's, learning all that I can.  Here is my current machine that hosts Plex and is a secondary machine to my gaming rig.  I also have a new server I'm building, where I haven't decided what to do with.
Plex Server-

Asus WS 299 Pro
Intel i9-7900x
8x16GG (128GB) Corsair LPX DDR4 2666 
Hauppauge WinTV-quadHD
eVGA GTX 1070
LSI MegaRAID SAS 9271-8i (with upgraded 1gb ram chip and battery)
      Two RAID 6 
            -4x10 TB WD RED
            -4x8   TB WD RED
             (If I did it again I would do freenas or Unraid)
1x WD Black (scratch disk)
1x Intel Optane 900p 280 GB U.2 (used for Plex Transcode and Metadata)
1x Samsung Evo 1TB m.2 for Boot Drive
Seasonic 1KW Prime PSU
All Fans have been upgraded to Noctua (love the brown), running at high speed, still silent.

I have a 13U Tripp-lite open unit that I'm currently building a wooden cabinet around (so it looks good in my office)

I also recently acquired an HP DL360e Gen 8 with:
2x E5-2680 v2 
24x16GB DDR3 1600 ECC Reg sticks
Going to run Proxmox and do other things with this

Also looking at getting a rack mount NAS for back up and maybe move my PLEX database too (open to ideas)

Very nice, I am thinking of using a Bean Canyon NUC. I wonder if the i5BEH is enough with Iris Plus 655?
